I am participating in a cookie exchange this Thursday and I decided because of my love for eggnog I was going to make eggnog cookies! You have to understand, I bake once in a blue moon so I wanted an easy to follow recipe that wouldn’t take me hours to make! I started searching and found this recipe on Jen’s Favorite Cookies Website and it turned out amazing so I had to share!! They only take, in my oven 13min to cook and the icing was a breeze, recipe below!! Scrumptious!!!

Eggnog Cookies
Ingredients:
- 3/4 cup of softened butter
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2/3 cup store bought eggnog
- 1 tsp vanilla
- 1/2 tsp salt
- 1/2 baking soda
- 3/4 tsp nutmeg
- 3 cups flour
Frosting:
- 6T store bought eggnog
- 2 1/2 cups powdered sugar
- 1 tsp nutmeg
Instructions
- Cream butter and sugars. Add eggs, eggnog and vanilla. Mix well.
- Add salt, soda, and nutmeg, mix well. Add flour and mix until combined. It should form a very soft dough
- Drop spoonfuls onto a lined baking sheet. Bake at 350F for 12-15 min (13 worked perfect for me in my oven!) until lightly brown. Let cool before frosting.
- For frosting, combine all ingredients, mixing until smooth. Frost cooled cookies and store between layers of wax paper or parchment paper.
Notes:
These cookies are cake and the dough is quite soft. I would recommend using lots of pam or wax paper to avoid sticking!
